Fatted Newsletter – Whole Hog


Clearly Fatted Calf’s Newsletter that included MeatHenge was one of the best, up until yesterday. This weeks newsletter goes on about a wedding in which Taylor and his wife Toponia stuff up an entire pig for a pit fire. There were two problems I found with this right off. First, we aren’t invited to this wedding. Okay there are 3 things a bit off. Second, we weren’t going to get any and Third, there were no pictures to SEE.


I emailed Taylor, he was nice enough to return the favor letting us all know they did get a few pictures and that this was a kinda ‘at the last moment’ thing and there wasn’t time to plan a ‘meeting of the minds’. Given the summer is only just getting started, I’m sure we can count on future whole hog happiness brought to us by our friends at Fatted Calf.
Something I want to let you all know is they have the Crepinettes with Morels back in stock. You simply MUST go on Saturday to get yours, they are packed in bunches of two patties (VERY affordable). Speaking of which, all of Taylor’s sausages are packed in pairs, except for the Merquez and a few others. This means that for under 5 dollars you can come away with some of the areas best sausage EVER.
Surely you can grab that ratty 5 dollar bill off your night stand and head out the door to the Berkeley Farmer’s Market tomorrow and get their by 11 or so to get your sausage package of love? ?

This Week at the Market:
Ever wonder what Taylor the Butcher and his wife Toponia do when they’re not making sausages for you? Well, this week they’re helping their friend Wylie who’s getting married. When some people help a friend who’s getting married, it might mean helping him pick out a tuxedo, or stuffing Jordan Almonds into little net party favor bags, but not T & T. Uh, uh. When The Fatted Calf helps out with a wedding, it involves meat. This particular time it involves taking a 75 pound piglet, stuffing it with 40 lbs. of cubed pork shoulder, herbs, lemon zest, garlic and chillies, stitching it up ‘real tight’, as Taylor says, digging a pit, filling it with charcoal, and turning said piggy on a spit for, oh, seven hours. Almost makes you wish you were getting married, doesn’t it? For Friends Of Fatted Calf either staunchly single or marvellously married, here’s a hint: ask what Taylor has for you this Saturday at the market, on the down low. It might be something incredible, and that’s really all we can say.
