Getting close to July 4th – Fatted Wieners


Hey, here is a post-note: The weiners were right on. Home made looking and very rich with yummy snappy snaps. Very nice.
This week the Fatted Calf brings us all kinds of goodies to our Saturday Farmer’s Market. Our special this week are their own savory, garlicky pork and beef doggies, lightly smoked with a nice, snappy casing. Sign me up for a few, eh. Another offering they have is Glace de Viande (meat jello). A nice addition to soups, sauces & reductions of some sort or another.
A point of interest might be Mortadella and Crepinettes with Morels. I don’t see it listed, but see if Taylor has any of his Rabbit Pate available. What a tasty smooth happiness that was. Oh my and you know what else? I see Ham and the Hocks I missed from last week !!! One should arrive somewhat early. I am to understand he sold out of many things quite quickly last week. Yay.
I know I missed last week, I hope to see you there. (I think I’ll bring my special cloth meat bags to assist me in leaving without looking like a freak, this time).


This Week at the Market
How long has it been since you?ve had a really good wiener? Now, now, get your mind out of the gutter and back on the meat counter, where it belongs. You know our wieners aren?t run of the mill. They are savory, garlicky pork and beef doggies, lightly smoked with a nice, snappy casing. As far as we at Fatted Calf are concerned, wieners and July 4th just go together. Yes, you need them for your grill this coming weekend, (for a test run), and then, to assert your Independence the weekend after that. On the other end of the elegance spectrum, we are offering our rich, silky, concentrated Meat Jell-o! Um, we mean Glace de Viande, a seriously reduced meat stock for you to use in your non-wiener cooking pursuits. A tiny bit of this magical stuff will instantly elevate your sauces, soups and stews to several notches above wiener level- -because we know you like to swing both ways.

  1. You should go talk to Taylor and see what he has available. He may even be willing to whip you up some meaty treat. He brings stuff sometimes that isn’t advertised. Also keep in mind, his kitchen is over in S.F. You could very well just go get what you need during the week. Easy.
