Yay! The holidays are far far away. We’re five months out and it’s time for a some meat roast action. I could feel it in my bones last week, Fatted Calf was due for something such as this fine Bone-in Pork Loin Roast stuffed with Spring Greens. If you’re a fan of the pork loin, you know damned well you want that bone in there. It’s meat, ain’t it? And shouldn’t meat have bones? Bones add flavor pal and flavor is where it’s at. You may want to give them a call to have your name put on one. Cause I’ll bet you dime to dollars there’ll be a line before 10am at the stall this coming Saturday morning. And if you show up at 10:30 you’ll most likely be going home with weeds and a frown.
Hey, what meat goes good with Duck? Pork. My favorite and yours, the Crepinette is sportin’ those two meats along with some nice pistachios. Pick up a package just in case for the following week when you’re strapped for time.
There’s something I haven’t seen before, Umbrian Salami. Sounds Roman to me, I can hardly wait! Well, okay I probably won’t be getting any of the salami, but it does sound like fun. All in all it looks like a good haul this week, read on and see what else you’ll need.

Mother’s Day. I don’t know how you feel about it, but for me it brings up a curious combo of tenderness and guilt. Can you ever really thank your mother for being your mother? Every gesture seems to either fall short or be falsely Grand. I tend to err on the fall-short side, actually. Once, when I was in the first grade, my mother and I had some big argument about something. (I wanted a Barbie, maybe, (she was very anti) or the first bell-bottom pants in my class). I went off to school, and later on the playground, my mother called me over from her side of the chain link fence. “I just wanted to say I’m sorry we fought”. I was annoyed and embarrassed that my mother had shown up at recess and I made that clear. She went away and I’ve never been able to think of that day without feeling guilty. Soon after I got my bell bottom pants, sewn into groovy outfits with matching halter tops, in navy and white gingham or a sassy print of juicy strawberries, which she finished while s itting on our front steps on warm summer nights, hemming and hemming. I can still picture every outfit she ever made me. Stellar seamstress that she was, cooking was never my mom’s favorite thing, but she made a kick-ass pie crust, cutting the shortening into the flour with 2 butter knives, and crimping it perfectly onto a pyrex pie plate. So many mommy moments, so much tenderness and guilt…
At The Fatted Calf this pre-Mother’s-Day week, we don’t have much in the way of guilt for you (we try not to believe in that) but, oh, the tenderness. Is there anything as tender as a pork loin? No, unless it’s a tender Pork Loin stuffed with Tender Spring Greens. This week’s Crepinettes feature Tenderness and Gilt, in the form of Pork, Duck, and the golden-green pistachio. Treat someone special to some slices of Guinea Hen Terrine or some super-suave Rabbit Rillettes on some lightly toasted Walnut Levain– Ohhh, Mama.

    On tap for tomorrow: Day long garage sale in the front yard, 2 pork butts smoke all day in the back yard.
    On tap for Mother’s day: Mrs. Slappy has requested Burmese delights, which I have learned over the years from her parents and aunts…Chicken coconut curry noodle soup, and spicy prok belly curry with tamarind.
